THE BACONCADO

The response has been amazing so far to The Bacon Wellington and other concoctions that you all have submitted to me here on Baconjew.com. The latest genius creation comes from none other than my brother-in-law, Phil Marks. He spent one late night over the past week inventing THE BACONCADO. Part Bacon, Part Goat Cheese, Part Avacado and 100% awesomeness. Some friends of mine always wanted our friends to put bacon bits in guacamole, and I guess this is even better.

The true heroes in the process. The toothpicks. Without them, the baconcado slips off the skewer, and we just have a big sloppy raw bacon, soft avocado mess all over the oven. Hail the mighty toothpick!


The hidden surprise revealed! The avocado is stuffed with chopped bacon and crumbled goat cheese! Glorious!


The flavor was devine. Rich and delicious. The texture and taste combinations of crispy, chewy, smooth and creamy, salty, greasy and did I mention rich...and delicious... Out of this world!

  3. I'm curious: it looks like you deliberately undercooked the bacon. why? it would seem that this would be all the more yummy with added crispness and without the ever-so-annoying trichinosis!

  6. how do find goat cheeze here? we're approaching Fidji now. Bacon no problem, we've got two animals on board, a big cat and a small dog. Our winter potatoes will have to replace the avocado.
