The response has been amazing so far to The Bacon Wellington and other concoctions that you all have submitted to me here on Baconjew.com. The latest genius creation comes from none other than my brother-in-law, Phil Marks. He spent one late night over the past week inventing THE BACONCADO. Part Bacon, Part Goat Cheese, Part Avacado and 100% awesomeness. Some friends of mine always wanted our friends to put bacon bits in guacamole, and I guess this is even better.
Check out the pics below with Phil's explanations...enjoy!
Here's a before pic. All ready to go. I didn't take prep pics b/c this is a masterpiece in progress. I'll document the prepping with the next attempt.

The true heroes in the process. The toothpicks. Without them, the baconcado slips off the skewer, and we just have a big sloppy raw bacon, soft avocado mess all over the oven. Hail the mighty toothpick!
The hidden surprise revealed! The avocado is stuffed with chopped bacon and crumbled goat cheese! Glorious!
The flavor was devine. Rich and delicious. The texture and taste combinations of crispy, chewy, smooth and creamy, salty, greasy and did I mention rich...and delicious... Out of this world!

ReplyDeleteThis looks fantastic!!!
ReplyDeleteHow long did you bake it and at what temp? Doing a cookout, and want to scare my friends :-)
ReplyDeleteI'm curious: it looks like you deliberately undercooked the bacon. why? it would seem that this would be all the more yummy with added crispness and without the ever-so-annoying trichinosis!
ReplyDelete*Incoherent drooling*
ReplyDeleteI've linked to this post on my blog. :)
First thought: This is ridiculous.
ReplyDeleteSecond Thought: My mouth is watering.
how do find goat cheeze here? we're approaching Fidji now. Bacon no problem, we've got two animals on board, a big cat and a small dog. Our winter potatoes will have to replace the avocado.
ReplyDeleteLovely, what good it looks like! I can feel the taste in my brain;)
ReplyDeleteI think you may have just cured me of my love for bacon. *vomit*
ReplyDeleteIt had been too longsince a man had had me. He sighed andlooked like a lost boy in a tight blue jump suit.
