For those of you not sick yet of eating holiday cookies and cake...HERE is a link to some recipes, courtesy of NPR (yeah, we are cultured like that sometimes).
My favorite being the Peanut Butter-Maple Bacon Fudge
Makes 49 squares
12 strips maple-smoked bacon, with 2 strips reserved for garnish
1 1/2 cups semisweet chocolate chips
1/2 cup peanut butter chips
1 (14-ounce) can sweetened condensed milk
4 tablespoons unsalted butter
1/2 teaspoon maple extract
Coat an 8-inch-square pan with cooking spray.
In a large skillet over medium heat, cook bacon, turning several times, until browned and done, 6 to 8 minutes. Transfer to a paper towel-lined plate to drain. Chop finely. Reserve 2 of the chopped slices for garnish.
Combine all ingredients except bacon in a medium saucepan over medium-low heat. Stir continuously until chips and butter are melted, and mixture is thick and smooth. Remove from heat. Stir in bacon.
Pour into prepared pan. Sprinkle the reserved chopped bacon on top and lightly press with your fingertips. Cover with aluminum foil and chill in the refrigerator until firm, at least 4 hours, or preferably overnight.
Slice into 7 equal rows to create 49 squares. It's a good idea to use a ruler to ensure equal-sized pieces. Serve at about room temperature.

A "RARE" BACON EXPERIENCE...
Ok, so this isn't much about bacon as it is about burgers. I was lucky enough to be invited by Rev from BURGER CONQUEST to head to RARE BAR & GRILL in NYC for a "burger tasting". These were honestly some of the best burgers I've ever had...and two of the three burgers tasted had some of the most amazing apple smoked bacon ever to grace a burger.
The best being the "M&M Burger" which is their classic flambeed in Makers Mark, topped with caramelized shallots, cheddar cheese & of course, apple smoked bacon (served slider style for this special event).

ORPHANED LAND UNITES THE MIDDLE EAST THROUGH METAL
Who's your favorite heavy metal band from Israel? What, you didn't know there were metal bands in the Middle East? Well, one that you need to check out is ORPHANED LAND. Their new record, The Never Ending Way of ORwarriOR hits stores on February 9th, 2010 (Jan 25th overseas).
Although the band is from Israel, they are looking to unite all of Middle East - no matter the country or religion - through their music. And to top it all off, they have one of the most striking publicity photos I've ever seen portraying this unity.
Vocalist Kobi Farhi comments on the album’s concept and the striking new promo photo as follows: “First of all, I wish to thank each and every one of you for all the comments you left for our new band photo. The comments were from Jews, Christians and Muslims as one, you all know that this unification is what we’re all about..."
Farhi continues: "The Never Ending Way of ORwarriOR is a concept album revolving around a hero: the warrior of light. This hero isn't someone specific, but could be the listener of the album himself, as this album deals with the problems we are facing in our lives every day. Especially here, in the Middle East, we feel that we are trapped in a loop of confusion and darkness. Living in this region, we see that year after year nothing changes. People continue to die in useless wars and we are trapped in a bloody circle. ORPHANED LAND has been around for 18 years and we continue to sing about the same subjects and stories, because after 18 years we are still living in a tragic, orphaned land. To fight this tragedy we have chosen a peaceful, yet powerful weapon: our music.”

File under the "Why didn't I think of that" category comes Bacon-Wrapped Matzoh Balls from THE GORBALS restaurant in California. The chef, Ilan Hall won the Bravo show "Top Chef" and is using his Scottish/Israeli roots as an influence on his menu. Can't wait to head out west and try these!

MATISYAHU HITS THE MAINSTREAM

His new album, Light, sold over 22,000 copies in it's first week and he's heading overseas for some tour dates in October (guessing after the holidays of course). Mark your calendars now, because in two weeks it will be time to celebrate INTERNATIONAL BACON DAY! September 5th is not only the first day of college football (well, for at least my alma mater), but everyone will be celebrating all that is our favorite pork product. YEAR OF THE SCHMEAR

PUNK ROCK JEWS
If you are in NYC on June 11th (I unfortunately will not), head on over to The YIVO Institute for Jewish Research to witness a summit of four punk rock legends talking about all things music and being Jewish.
These legends include Ramones founder and original drummer Tommy Ramone (born Tamas Erdelyi), Dictators singer and radio personality Handsome Dick Manitoba (Richard Blum), Patti Smith guitarist and journalist Lenny Kaye, and Blondie co-founder and guitarist Chris Stein.

CELEBRATE THE KENTUCKY DERBY WITH BACON MINT JULEPS
In celebration of the Kentucky Derby tomorrow afternoon, I've combined a couple of recipes to bring you the "Bacon Mint Julep"
First off, you need to make Don Lee of PDT's Bacon-Infused Bourbon:
-Take 3 or 4 slices bacon, or enough to render 1 ounce of fat (PDT uses Benton’s, but any extra-smoky variety will do)
-Cook bacon in pan and reserve rendered fat.
-When bacon fat has cooled a bit, pour off one ounce from pan.
-Pour bourbon into a non-porous container.
-Strain the bacon fat into the container and infuse for 4 to 6 hours at room temperature.
-Place mixture in freezer until all the fat is solidified.
-With a slotted spoon, remove fat and strain mixture into a 750ml bottle of bourbon such as Four Roses.
Next, take the finished Bacon-Infused Bourbon, and use it in the following recipe:
Ingredients
-10 mint leaves, plus a sprig for garnish
-1 1/2 teaspoons superfine sugar
-Seltzer water
-Crushed ice
-2 1/2 ounces Bacon-infused bourbon
Directions
-Place the mint leaves in the bottom of an old-fashioned glass and top with the sugar.
-Muddle these together until the leaves begin to break down.
-Add a splash of seltzer water, fill the glass 3/4 full with crushed ice, and add the bourbon.
-Top with another splash of seltzer, stir, and garnish with a sprig of mint.
-Serve immediately.
-Lather. Rinse. Repeat!

PARK SLOPE PORK OFF - SUN MAY 3RD
This Sunday 5/3 in Park Slope (that's Brooklyn for those of you not in NY), there will be the first ever "Pork Off" featuring over 21 chefs making all things pork!
This is a food competition fundraiser for Kamay at Puso (Hand and Heart), a nonprofit that assists survivors of toxic waste in Madapdap, Philippines.
The only rule they have is "make a recipe with pork in it. Bacon, snout, tail, hoof, ham, hock, whatever! Extra points from me if you make a dessert. (And if you use fakin’ bacon, you best fool us but good.)"
